Chaque entr\u00e9e part du terme en espagnol standard moderne et pr\u00e9cise ses formes en castillan m\u00e9di\u00e9val ainsi que dans d&rsquo;autres vari\u00e9t\u00e9s r\u00e9gionales de la p\u00e9ninsule ib\u00e9rique. Elle comprend ensuite une br\u00e8ve d\u00e9finition et les premiers t\u00e9moignages du mot. Un deuxi\u00e8me ensemble de donn\u00e9es porte sur l&rsquo;information encyclop\u00e9dique extraite de la documentation historique, \u00e0 savoir ce que repr\u00e9sente l&rsquo;aliment, le plat ou la boisson en question dans le syst\u00e8me nutritionnel de l&rsquo;\u00e9poque. Il s&rsquo;agit d&rsquo;une alimentation pr\u00e9moderne qui n&rsquo;inclut pas encore certains \u00e9l\u00e9ments v\u00e9g\u00e9taux originaires des Am\u00e9riques comme la pomme de terre, la tomate, le poivron, etc. D&rsquo;autre part, les textes permettent d&rsquo;esquisser une sociologie sommaire des habitudes alimentaires, allant des banquets de la noblesse d\u00e9crits dans les livres de cuisine aux frugaux repas des paysans \u00e9voqu\u00e9s dans la litt\u00e9rature.<\/p>\n\n\n\n<p>Pour l&rsquo;\u00e9laboration de ce dictionnaire, Rolf Eberenz (<a href=\"https:\/\/www.unil.ch\/esp\" target=\"_blank\" rel=\"noreferrer noopener\">Section d&rsquo;espagnol<\/a>) s&rsquo;est fond\u00e9 sur l&rsquo;analyse d&rsquo;un riche corpus comprenant des livres de cuisine de l&rsquo;\u00e9poque, mais aussi des trait\u00e9s de m\u00e9decine et de di\u00e9t\u00e9tique, des r\u00e9pertoires lexicographiques, des \u0153uvres de la litt\u00e9rature romanesque et des chroniques faisant abondamment r\u00e9f\u00e9rence \u00e0 la nourriture ainsi que des dictons populaires.
